Tori Russotti
Operations Manager
Tori is a food enthusiast, animal lover, and pickleball addict. In 2019, she traded Sonoma County for San Luis Obispo, where she pursued a Bachelor of Science in Wine and Viticulture, with a focus on enology, graduating in 2023. During the four years at Cal Poly she developed an insatiable interest in fine dining, and the impact of creating memorable experiences for others. Around graduation she realized the central coast was not such a transient stop, but rather a place she passionately calls home. She ultimately discovered that her dual passions for winemaking and hospitality could thrive here in San Luis Obispo simultaneously.
Tori says the most important thing in her personal life is the fastest growing sport in America– pickleball. She says it played a large role in getting strongholds in the community, making friends of all ages, and later influencing her decision to stay in San Luis Obispo post college. After an energetic game, Tori delights in expanding her palate and exploring diverse cuisines across California. A fun fact about Tori is that she doesn’t cook—she views it as a necessary tradeoff for her career in hospitality. After all, experiencing great dining from the other side of the table never gets old.
Tori joined the Seven Oxen team in 2024 after a fortuitous meeting at Ox & Anchor in San Luis Obispo, where she was working as a server and had Bastien and Adriana’s table. Tori is now the Operations Manager for Seven Oxen, and wears many hats for the team, including management of the Wine Club, overseeing the tasting room and the experiences offered, as well as a number of administrative tasks. She also works in the vineyard and cellar during harvest, helping the small team survive the arduous harvest season!
